We were going to make a second pie but Shawn decided to attempt a stromboli. I’m going to admit, I was impressed with the outcome.The chilis gave this a nice kick. Basically, a pizza, but rolled up. Brilliant.

Smear the tomato sauce evenly over the pizza base. Tear the mozzarella into pieces and dob these over, then scatter over as much chilli as you like and season with salt and pepper. Lay the pancetta over the top so it will crisp up during cooking and the juices will cook into the pizza. Drizzle with extra virgin olive oil and cook until crisp and golden. 20 minutes.
