pizza with mushrooms, courgette, basil and mozzarella

Sometimes on rainy days back in the asbury house, Shawn and I would make homemade pizzas. They were super easy with little work so it was right up our lazy sunday alley. Typically a white pie and a tomato pie, this time we went a slightly different route. I really love pizza ( top 5 favorite food) and when I get to make it in my own oven it’s twice as wonderful. 

I’m exhausted so this post will be a short one. Too much red wine last night and a day long head ache will do that. No seriously, I just ate pizza and I’m ready for bed.  iamlame.

Ingredients:

This recipe originally called for salami. I’m not into no salami so I substituted it with mushrooms. Word.

  • fresh pizza dough. you can find it either frozen or refrigerated. Preferably the latter.
  •  4 tablespoons tomato sauce
  • 1 firm courgette, sliced thin
  • 8 fresh basil leaves
  • 1 tablespoon minced garlic
  • 1 sprig of rosemary
  • 1 cup sliced button mushrooms
  •  85g/3oz fresh mozzarella
  • olive oil
  • sea salt and freshly ground black pepper

Directions:

Preheat oven to 425 F.

Smear your tomato sauce evenly over the pizza base. Lay over your courgettes, mushrooms, garlic, rosemary and basil. Place small pieces of mozzarella in between the gaps, drizzle with olive oil and season with salt and pepper. Cook until crisp and golden. 20 minutes.
